Chicken Alfredo Recipe

Prep Time: 10 minutes

Cook Time: 20 minutes

Servings: 6 servings

Ingredients:
  • 1 (16-ounce) package fettuccine pasta (454g)
  • 1 pound boneless, skinless chicken breasts
  • ¾ teaspoon salt
  • ¼ teaspoon ground black pepper
  • 2 tablespoons olive oil
  • 1 tablespoon unsalted butter

For the sauce
  • 2 cups heavy cream (480mL)
  • ½ cup unsalted butter cubed (113g)
  • 3 cloves garlic minced (about 1 tablespoon minced)
  • ½ teaspoon salt
  • ½ teaspoon ground black pepper
  • 1 cup grated parmesan cheese (90g)
  • Chopped fresh parsley for garnish

Instructions
  • Bring a large pot of salted water to a boil over medium-high heat.
  • While waiting for the water to boil, take your chicken and season it thoroughly with salt and pepper. Ensure that both sides are well-seasoned to enhance the flavor of the meat.
  • Heat the oil and butter in a large skillet over medium-high heat. Add the chicken pieces to the skillet. Cook the chicken until browned on both sides, about 7 to 9 minutes per side. Use a meat thermometer to ensure the thickest part of each piece reaches 165°F.
  • Remove the chicken from the skillet and cover it with foil to keep warm. Wipe the skillet clean with a paper towel.
  • To prepare the pasta, begin by adding it to a pot of boiling water. Cook the pasta according to the instructions on the package.
  • After the pasta is cooked, drain it thoroughly, making sure to reserve ½ cup of the cooking water.
  • Keep the pasta warm until ready to serve.

For the sauce
  • While the pasta is boiling, prepare the sauce using the same skillet in which you cooked the chicken. Begin by combining the cream, butter, and garlic in the skillet. Place the skillet over medium heat, and whisk frequently until the butter has fully melted.
  • Season the mixture with salt and pepper to taste, and continue whisking. Allow the sauce to come to a low simmer. Keep whisking constantly until it slightly thickens, which should take approximately 5 minutes.

  • Gradually whisk in the Parmesan cheese until the mixture is smooth. Remove the pan from the heat and add the cooked pasta.
  • Toss the pasta to ensure it is evenly coated with the sauce, adding a small amount of the reserved pasta water if necessary to achieve the desired consistency.

  • To prepare your dish, start by slicing the chicken breasts into strips that are approximately ½-inch thick. Once that’s done, you can proceed to divide the cooked pasta evenly among serving bowls.

  • Next, place the sliced chicken on top of the pasta in each bowl.
  • Finally, garnish the dish with a generous sprinkle of fresh parsley for added flavor and visual appeal.

Cooking Tips:
  • It’s important not to overcook chicken. When the thickest part of the chicken breast reaches an internal temperature of 165°F, it is safe to eat.
  • Using a kitchen thermometer can help you accurately measure this internal temperature, ensuring the chicken is properly cooked without becoming dry.
  • For the best flavor and texture in your dishes, always use freshly grated Parmesan cheese. Freshly grated cheese melts much better than pre-grated options, enhancing the creaminess and richness of your meals.
  • To create a rich and delicious Alfredo sauce, using heavy cream is essential. Often referred to as heavy whipping cream, it contains a high fat content that allows it to withstand higher temperatures and achieve the perfect thickness. This ensures your Alfredo sauce will have a creamy and luxurious texture that’s both satisfying and flavorful.
