After countless disappointing store-bought hummus experiences, I decided to make my own. What a game-changer! This easy recipe is incredibly creamy and smooth, nothing like the gritty, bland versions I’d been settling for. It’s a must-try for anyone who loves hummus.

 

Hummus Recipe

  • Prep Time: 10 minutes
  • Servings: 6 servings or about 1 1/2 cups

 

Ingredients:
  • 1 (15oz) can chickpeas or 1 ½ cups (250g) cooked chickpeas
  • 1/4 cup (60ml) fresh lemon juice, 1 large lemon
  • 1/4 cup (60ml) well-stirred tahini
  • 1 small garlic clove, minced
  • 2 tablespoons (30ml) extra-virgin olive oil, plus more for serving
  • 1/2 teaspoon ground cumin
  • Salt to taste
  • 2 to 3 tablespoons (45ml) cold water or aquafaba
  • Dash ground paprika, sumac, or Za’atar for serving

 

Instructions:
  • In a food processor bowl, combine tahini and lemon juice. Process for one minute. Pause to scrape down the sides and bottom of the bowl, then continue processing for an additional 30 seconds. This extra processing time helps to “whip” or “cream” the tahini, ensuring the hummus turns out smooth and creamy.

 

  • To enhance the flavor of the whipped tahini and lemon juice mixture, add olive oil, minced garlic, cumin, and 1/2 teaspoon of salt. Process the mixture for 30 seconds, ensuring that all ingredients are well-incorporated. Then, scrape down the sides and bottom of the bowl to capture any ingredients that may have stuck.

 

  • Continue processing for an additional 30 seconds, or until the mixture is thoroughly blended and achieves a smooth consistency.

 

  • Place half of the chickpeas into a food processor and blend for approximately one minute. Stop the processor, then scrape down the sides and bottom of the bowl to ensure even processing.

 

  • Next, add the remaining chickpeas. Continue to blend until the mixture becomes thick and relatively smooth, which should take an additional one to two minutes.

 

  • To achieve the ideal texture for your hummus, you might find it too thick and notice small bits of chickpea still present. To remedy this, gradually incorporate 2 to 3 tablespoons of cold water or aquafaba while the food processor is running. This process will help you attain the perfect consistency.

 

  • To serve, drizzle a generous amount of olive oil over the hummus. For added flavor and visual appeal, sprinkle it with paprika, sumac, or Za’atar. Taste the hummus beforehand and make any necessary adjustments to the seasoning.
  • To store homemade hummus properly, place it in an airtight container and refrigerate it for up to one week.

 

Tips:
  • If you plan to keep it for a longer period, you can freeze the hummus. To do so, first cover it with a thin layer of olive oil and then transfer it to a freezer-safe container. This will help preserve its flavor and texture for up to one month.
